In June, Andrés Torres won the Basque Culinary World Prize—often called the “Nobel Prize of cooking”. Casa
Nova, the restaurant where he works, is a temple to the art of slow, soulful cooking. It’s the kind of place that, using
only what is naturally abundant, relies on age-old methods and the particularities of a region’s land, climate and
cultures.
Many of Torres’s cooking techniques fit in with his commitment to sustainability. He has seen enough of the
world to know how vital it is to preserve the planet’s resources. “Sustainability is very popular in restaurants all over
the world,” he says. “But there’s a lot of nonsense out there. For me, sustainability is something very simple.” To
that end, Casa Nova has egg-laying hens, beehives (蜂房) to make honey, and an enormous vegetable land.
So far, admittedly, these are fairly standard eco practices. But Torres even produces his own salt, risking out in a
boat to collect Mediterranean seawater. He’s created a stone “insect hotel” to support pest-eating insects that protect
crops without the need for pesticides (杀虫剂). Rainwater is gathered in containers previously used to mature wine,
and then used on the vegetables. Plates and cups are made by Torres’s wife. And instead of using dehydrators (脱水剂),
as many high-end restaurants and industrial producers do, Torres built his own drying room and smokehouse.
Environmentalism is only part of the story he wants to tell. The restaurant he runs helps fund Global
Humanitaria, a nonprofit he set up in 1999 to support education and children’s rights across the world and provide
emergency relief for victims of conflict and natural disasters.

A new study, published in the Proceedings of the National Academy of Sciences, concludes that proper
reductions in beef production, particularly in wealthier nations, could significantly slow down climate change by
allowing forests to regrow on former grasslands.
The study used remote sensing technology to map grassland productivity and estimate benefits of reducing beef
production, finding that restoring all potentially forested grasslands globally could store 445 gigatons (千兆吨) of
CO2 by 2100—equal to amount of fossil fuel emissions (排放) over a decade.
“We can achieve enormous climate benefits with proper changes to the total global beef production,” says
Matthew N. Hayek, an assistant professor in New York University’s environmental studies department. “By focusing
on regions with potentially high carbon sequestration (隔离) in forests, some restoration strategies could maximize
climate benefits while minimizing changes to food supplies.”
The team see high- and upper-middle-income countries as possible candidates for forest restoration, where
grass grows only during a short growing season. These regions, such as parts of North America and Europe, have
some current grasslands that do not produce very much grass per acre, and thus have potential to grow thick forests
able to absorb a lot of carbon. In contrast, lower-income regions like sub-Saharan Africa and South America, where
much more grass can grow year-round, can contribute to balancing reduced production elsewhere.
Matthew acknowledged that reforestation cannot replace cutting down on fossil fuel pollution, but works
together with it to help fight climate change. “In many places, this regrowth could occur naturally without any
human involvement. However, in some places, with especially damaged environments or soils, native and diverse
tree-planting could give regrowth a helping hand,” says Matthew.
Although the findings do not call for extreme changes to global food production, the team emphasizes that
immediate action is essential to meet climate goals. Targeted policies are called for to prioritize forest recovery in
high-impact areas—for instance, by offering beef producers rewards for forest land conservation or purchasing their
company shares.
